"The pastry for timbales is puff pastry or shortcrust pastry, but without sugar. The macaroni, broken to the length of half a finger, cooked in broth and then cooled out of it, are seasoned with a dense and rich sauce made of beef and pork, and arranged in the pastry shell within a suitably sized casserole, well mixed together and interlayered with a ragout of sausages, sweetbreads, and ham cut into thin strips..."
