Sapore di pomidori - Cavalcanti

Ready-made sauce, prepared with tomato puree, flavoured with smoked ham, herbs and chilli pepper. The recipe is taken from "Cucina teorico-pratica" by Ippolito Cavalcanti, Neapolitan nobleman, man of letters and cook at the Bourbon Court in Naples in the first half of the 19th century. Ideal for dressing pasta and "bruschetta". It meets the taste of who loves decisive and slightly spicy flavours.
