Ready-made sauce, prepared with tomato puree, flavoured with pepper and onion. The recipe is taken from "IIl cuoco galante" by Vincenzo Corrado, cook at the Bourbon Court of Naples in the second half of the 18th century. Ideal for dressing pasta and "bruschetta".
